I'm glad you love the cookies. I know... my almond londons also turned out big! I only use fresh pineapple & sugar to make the jam but i usually estimate the quantiy & cooking time. I grate the pineapple & combine it with sugar in a pot. Cook it over medium fire, stirring continuously, until the jam is moderately thick. Just bear in mind, the jam will be thicker when it has cooled down, so don't cook it too long. Perhaps u could refer to other bloggers who have recorded the specific qty & cooking time. I hope to share my recipe when I cook it the next time.
